Pepsin er et fordøyelsesenzym; det ekstraheres fra Pepsinogen under PH 1.5-5.0 og pepsinogenet skilles ut av magecellen. Pepsin kan spalte de størknede proteinene til pepton ved effekt av magesyre, men det kan ikke gå noe videre til aminosyre. Den beste effektive tilstanden for pepsin er PH 1.6-1.8
